MATCHASABI ROASTED NUTS
Forget regular salted nuts, these tasty treats combine the heat of wasabi with the gentler yet distinctive flavour of matcha. Serve with drinks or as an easy snack to see you through to dinner. Warning: these nuts are completely addictive!
MAKES 225g/8oz
PREP: 3 MINUTES,
PLUS COOLING
COOK: 10 MINUTES
2 tsp cornflour/cornstarch
1 tsp matcha
1 tbsp wasabi paste
4 tsp clear honey
200g/7oz/1¼ cups mixed blanched almonds and cashew nuts
sea salt, to sprinkle
1 Preheat the oven to 200°C/400°F/gas 6. Line a baking sheet with baking parchment. Combine the cornflour/cornstarch and matcha in a medium-size bowl. Add the wasabi paste and honey, and mix to form a smooth, thick paste.
2 Add the nuts and stir well until coated as evenly as possible. The mixture will be quite sticky. Tip out onto the prepared baking sheet, separating the nuts on the sheet as best you can – this will help prevent them from sticking.
3 Bake for 7–8 minutes until the matcha coating has dried out a little. Some of the nuts will just be starting to colour. Sprinkle generously with salt and leave to cool slightly. Break up any nuts that have stuck together and briefly return any to the oven if they’re still soft or sticky. Leave to cool completely, then transfer to a serving dish or airtight jar where they’ll keep for up to 5 days.
